Inside Scoop: The 2,500-Year History of Ice Cream

Ice cream — one of the world’s most beloved frozen treats — has an unexpectedly long history stretching back roughly 2,500 years, beginning with ancient innovations in ice storage and evolving into the modern dessert enjoyed across continents. The journey highlights how human ingenuity turned a simple desire to cool off into a global culinary phenomenon.

The origins of ice cream trace back to ancient Persia (modern-day Iran) around 550 BCE, where builders constructed yakhchals, ingenious beehive-shaped structures that could both produce and store ice even in desert conditions. These early ice houses used a combination of shaded shallow ponds, wind towers and evaporation to chill water and accumulate ice for use year-round, laying the foundation for frozen desserts.

Frozen delicacies evolved long before the creamy confections we know today. Stored ice was mixed with fruit, honey or milk to make early sorbets, sharbats and regional specialties like booza and bastani in the Middle East after Persian methods spread across the region post-Arab conquest. In China during the Tang dynasty (618–907 CE), inventive combinations of goat’s milk curd and ice produced early forms of icy desserts described in historical texts.

Technological advances in freezing followed in Europe. In the 16th century, scientific experimentation with salt and ice helped refine methods of chilling liquids rapidly, enabling the creation of smoother frozen mixtures. By the late 17th century, both Italy and France laid claim to the first recipes that resemble modern ice cream: Italian chef Alberto Latini’s “milk sorbet” in Lo Scalco alla Moderna and French recipes documented by Nicolas Audiger included refined techniques for texture and flavour that foreshadowed today’s ice cream.

Over the centuries, ice cream transformed from a luxury enjoyed by elites to a widely accessible treat, propelled by mechanical refrigeration in the 19th and 20th centuries and later by industrial production and global trade. Today, billions around the world enjoy ice cream in countless flavors and formats, a testament to the enduring appeal of this centuries-old human craving.
