
The alternative-protein sector has attracted almost $20 billion in global investment, but the category has struggled to meet investor expectations, with taste, texture and affordability continuing to limit mainstream consumer adoption.
According to analysis cited by DairyReporter, Bain & Company’s Green Technology Performance Index found that alternative proteins have significantly underperformed expectations established around a decade ago. Bain attributed the gap primarily to the inability of products to deliver a sufficiently attractive combination of taste, texture and price to achieve mass-market scale.
The investment environment has also become more selective. Data from the Good Food Institute (GFI) showed that global venture-capital investment in alternative proteins declined from €341 million to €306 million during the first half of 2026.
However, fermentation-based technologies are emerging as a notable area of investor interest within the broader category.
GFI data showed that companies developing precision-fermentation technologies raised €100 million in the first half of 2026. Biomass fermentation companies raised a further €99 million, compared with €60 million during the same period in the previous year.
The renewed funding does not necessarily indicate that the wider alternative-protein market has overcome its challenges. Bain's Jean-Charles van den Branden said the new investment could reflect investor interest in technologies capable of improving the consumer proposition, while noting that it remains to be seen whether the additional capital will translate into products that consumers prefer at competitive prices.
Within dairy alternatives, precision fermentation is attracting particular attention because the technology can produce specific dairy proteins without using conventional animal-derived ingredients. The approach is being explored as a way to address some of the texture and flavour limitations associated with earlier generations of plant-based dairy alternatives.
The technology nevertheless faces its own commercial hurdles, including regulatory approvals, production scale-up, manufacturing costs and consumer acceptance. These challenges have encouraged some companies to focus initially on B2B ingredient markets rather than competing directly with conventional dairy products at retail.
Several companies are advancing their precision-fermented dairy protein platforms. German company Formo is preparing for a US market entry and expects to receive an FDA no-questions letter within weeks, according to the report. The company uses E. coli to produce casein through precision fermentation and is working with co-manufacturers to scale production.
Belgian company Those Vegan Cowboys is also preparing for a US commercial launch and has expanded its portfolio with several bovine caseins designed for applications including functional cheese and nutritional products.
US-based New Culture, which focuses on precision-fermented mozzarella, has secured a second patent for its animal-free casein and is preparing to launch its cow-free mozzarella in the foodservice sector.
The next major challenge for these businesses will be moving from technological and regulatory progress to commercially viable production. Companies will need to demonstrate that they can manufacture at sufficient scale, achieve competitive costs and generate sustained demand from food manufacturers and consumers.
For the dairy industry, the developments indicate that alternative proteins are entering a more selective phase. Rather than investment flowing broadly across the category, capital is increasingly being directed toward technologies and applications that seek to address specific limitations around functionality, nutrition, taste and production economics.
The evolution of precision-fermented dairy proteins could therefore remain an important area to watch as food companies assess new sources of dairy-like proteins alongside conventional milk and established plant-based alternatives.
