The global non-thermal pasteurization market is witnessing rapid growth, projected to rise from USD 2.3 billion in 2023 to USD 5.7 billion by 2028, expanding at a strong CAGR of 20%, driven by increasing demand for safe, minimally processed, and high-quality food products.

The surge is fueled by rising consumption of protein-based foods, dairy products, frozen meat, and fruits & vegetables, along with a growing consumer preference for clean-label and nutrient-rich foods, pushing food manufacturers to adopt advanced processing technologies.

Non-thermal technologies such as high-pressure processing (HPP), pulsed electric fields (PEF), and ultraviolet (UV) treatment are gaining traction as they extend shelf life while preserving taste, texture, and nutritional value, making them increasingly relevant for dairy and beverage applications.
